Turtle Jelly
All over Hong Kong special shops sell turtle jelly.
You can tell by the turtle shells piled into a pyramid in the window.
Turtle jelly is made by stewing the turtle shell for 20 hours. The stew is added to a broth made from over 20 herbs, including ginseng. The result is a bowl of steaming, quivering black goo. People eat it to cure a variety of illnesses.
Conservationists are worried because many Asian turtle species are in danger of extinction from over-harvesting.
